Cookie Stuffed Dates

My favourite kind of stuffed food - naturally sweet but feels like a decadent dessert

Ingredients

10 medjool dates

Cookie stuffing:3/4 cup almond meal
1/4 cup shredded coconut
3 tbsp butter melted
1 tbsp honey
4 squares dark chocolate, chopped
10 Medjool dates, pitted

Topping: 100g dark chocolate melted
sea salt

  1. Pit all dates.

  2. Mix all stuffing ingredients together and stuff each date generously with the cookie mixture.

  3. Place dates on a lined tray.

  4. Top each date with melted choc and a crack of sea salt.

  5. Place in the freezer until set.

  6. Store in an airtight container in the fridge.
