Matcha & Apricot Balls

Blitz your dry ingredients first to make a crumb consistency then add your wet ingredients + matcha

Ingredients

  • 1/2 cup oats

  • 1/4 cup dried coconut (shredded, desiccated, flakes all work)

  • 3 TBSP sunflower seeds

  • 2 TBSP hemp seeds

  • 1/3 cup natural crunchy Peanut Butter or smooth

  • 1/2 cup each dates & apricots, soaked for 10 mins in boiling water to soften then drained

  • 2 tsp matcha powder

  • crack of salt

  • 2 TBSP water

Blitz all dry ingredients but the matcha to a crumb.

Then add the rest, blitz until combined - should be able to stick together and not fall apart

Roll into heaped TBSP sized balls - makes about 12

Freeze for 30 mins

Store in a jar in the fridge.
