Simple Dahl

Technically not your traditional Dahl but a recipe that’s easy to whip up when you need a warming meal - especially around your period

Ingredients

1.2 a Japanese pumpkin (or butternut) diced
1 onion, diced
2 carrots, diced
1 cup dried red lentils
Big handful of parsley
1 cup of stock or bone broth (I used miso)
2 large handfuls of spinach or kale
2 Tbsp each of crushed ginger and garlic
1/2 Tbsp each of cumin, turmeric, coriander and cayenne pepper powder
*add more cumin if not pungent enough
1/2 can crushed tomatoes
1 cup coconut milk

  1. Boil lentils until soft

  2. Brown the onion, then add pumpkin and carrots. Cook for 5 minutes.

  3. Add all spices, ginger and garlic. Turn down the heat to simmer.

  4. Add parsley, lentils, stock/broth, tomatoes and let simmer until vegetables are soft.

  5. Add spinach or kale and coconut milk before serving. Best with rice, noodles, bread or as is topped with a little tahini.
