Whole food ANZACs

Both golden on the outside and soft on the inside….

…. plus a little chocolate of course!

Ingredients

1 cup rolled oats
3/4 cup almond meal
1/2 cup dessicated coconut
2 Tbsp spelt flour or plain flour
2 tsp chia seeds
1 egg
1 tsp baking soda
1 ripe mashed banana
2 tbsp honey or golden syrup
1 Tbsp extra virgin olive oil

Optional: 1/2 block of dark chocolate melted

Mix dry ingredients making sure the baking soda is fully dissolved
Mash banana & mix with the wet ingredients
Combine all
Roll into 8 balls & flatten into discs, shaping any cracks, on a lined tray
Bake for 12-15 mins @ 160 degrees
Cool completely
Then melt the chocolate & twist the bottom of each biscuit into the chocolate to coat
Let chocolate set upside down on a wire rack in the fridge for an hour
Store in an airtight container in a cool place.
