Whole food Caramel Slice

Perfect sweet treat that’s refined sugar free but still gives comfort food vibes x

Base
1/2 cup rolled oats
1/2 cup coconut flakes
1/4 cup cashews
1/4 cup sunflower seeds
1/2 cup dates soaked in boiling water for 5 mins, drain
Touch of salt

Blitz the above ingredients together until a sticky crumb forms and press into the base of a lined loaf tin.

Caramel centre
1/2 cup coconut milk, canned (I like the AYAM brand)
1.5 tsp cornflour
1/2 cup coconut sugar
2 Tbsp maca powder

Combine all and bring to boil in a saucepan until thickened.
Let cool completely before pouring on top of base layer.
Freeze for at least an hour.

Top
150g dark chocolate, I used Whittakers Dark Ghana
1/4 cup coconut milk, canned

Melt all together in a saucepan and layer on top of caramel.
Set in freezer until hardened.
Once fully set slice into desired pieces and store in the fridge. Let defrost for an hour or more before eating so the caramel becomes gooey!
