Dark Chocolate Sesame Cookies

Maybe the best cookies I’ve ever made?!

Ingredients ~ Makes 10-12

1 cup buckwheat flour
1 cup almond meal
1/2 cup raw sugar (or whatever sugar you like)
1 egg
1/2 cup butter, melted
2 Tbsp tahini, hulled
1/2 tsp baking powder
1 cup chopped dark chocolate or choc chips
Pinch salt
1/2 tsp ground ginger
Good shake of sesame seeds

  1. Preheat oven to 180 degrees. Line baking tray with baking paper.

  2. Mix all dry ingredients. Then fold in wet ingredients until well combined.

  3. Fold through the chocolate and sesame seeds.

  4. Form into balls and place evenly across the baking tray.

  5. Press down each cookie gently, just a little. Top with another crack of salt if you wish (very recommended!)

  6. Bake for 15 mins. Allow to cool completely on a cooling rack and store in a container in the fridge.
