Ginger nut Biscotti

Perfect for dunking in your coffee at anythime of the day x

Ingredients

1 1/2 cups almond meal - I used unblanched but either is fine
1/2 cup wholemeal spelt flour - white spelt is fine too
1/4 tsp baking soda
1/4 tsp salt
1 tsp nutmeg
1 tsp cinnamon
2 tsp ground ginger
1/4 cup butter, softened
3 Tbsp honey

  1. Preheat oven to 180, line a baking tray with baking paper

  2. Mix all the dry ingredients, making sure all baking soda is dissolved properly

  3. Add in butter & honey. Mix until a dough forms.

  4. Transfer to baking tray & shape into a log about 1.5cm thick

  5. Bake for 20 mins, remove from the oven & let it cool until its cool enough to slice

  6. Slice the dough into biscotti, about 1 cm thick slices. Then turn onto side & bake for 10 mins

  7. Then flip onto other side & bake for another 10 mins

  8. Cool completely. Store in an airtight conatiner/jar in the fridge.

    *Optional to dip half of each into melted dark chocolate and let set in the fridge before transferring to a container.
